Mom’s Tenderized Steaks.


Brown the steaks: can use flour breading if desire,  (or bread crumbs) dip in milk then breading mix  if you are using the breading.

In large bowl mix 3 cans soup, add 1 can milk.

Mix in brown gravy mix, can add small palm of dried onions if desire.  ½ teaspoon salt, ½ teaspoon pepper.  Add 2 cans mushrooms, don’t have to drain.  Mix this all up, put some in bottom of crock pot, put in steak in layers, put layer of soup mixture between each layer of steaks and cover top of steaks with soup mixture. Put on lid, and turn crock pot on low.

 

If this is put in by noon or 1pm it will be done for supper.


Michelle's Pizza Bake

Need:

1 pkg of rotini noodles.

1 pkg of pepperoni

4-6 cups of cheese, I use mozzarella (optional)

1 jar of spaghetti sauce

1 lb of sausage

1 pkg of Canadian bacon or 2 slices of 1 inch thick sliced ham cut into cubes

 

Instructions:

1.  Cook rotini noodles until done.

2.  Brown pkg of sausage, if you use sliced ham add when sausage is almost done to get ham warm.

3.  When done mix all ingredients except for cheese.  (You can put in a hand full of cheese if desired.  Put into a pan that will it will fit in.)

4.  Add cheese on top. (optional)

5.  Cook on 350 degrees until cheese is melted on top


Oyster Crackers Ranch Style


1 Cup popcorn oil

2 T Lemon Pepper

1 Envelope Dry Ranch Dressing

   Add

6 Boxes of Oyster Crackers and Mix Together

Bake for 1 hour at 225 degrees F

Stir several times during baking.


JM (James Meeks) All Purpose Seasoning

This is my latest attempt at replicating this seasoning that has become a family favorite.
1/4/2022.  I think I got it pretty close.


Parts:  Ingredients:

  3     Black Pepper (ground)
  3     Salt (iodized table)
  3     Paprika
  3     Granulated Garlic
  3     Granulated Onion
  4     Celery Seed

  1     Granulated Sugar

1/3   Ground Turmeric


Joan's Fudge Cake (Grandma Joan's Recipe)

Mix Dry Ingredients:

2 1/2 cups sifted flour
1teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 Cups sugar
1/2 cup Hershey's cocoa "Mom never measured this, we just always put 3 heaping tablespoons (soup spoon style)"

Add Liquid Ingredients 1 at a time:

2 eggs, in a well in the dry ingredients then mix with them,
then add
1/2 cup liquid or melted shortening
1 teaspoon vanilla,
1/2 cup hot water, watch this you may not need it all if your
batter is thin enough.
1 cup sour milk or cream
"Mom soured the milk by putting 1 teaspoon of vinegar in a
coffee cup full of milk. Just a regular coffee cup not a big
one! LOL"

Grease and flour pan.
Pre-heat oven to 350 degrees
Bake at 350 degrees for 30 to 35 minutes.

If in higher altitude may need to go a little longer...


Rosettes (Dad's Recipe)

3 Cups Flour
3 Tablespoons Sugar
1/2 Teaspoon Salt
1 Can (12 ounces) sure fine Evaporated Milk
1 1/2 Can Water
3 Eggs
2 Tablespoons Vegetable Oil

Notes: According to dad this makes about 75 small rosettes. So far I have had best results by keeping the oil at about 330-350 degrees. Make sure that you have a thermometer that can measure up to 400 Degrees so you can monitor your oil temperature. If you are using a deep fryer then try to get one that has adjustable temperature settings or you will constantly be plugging and unpluging the fryer to maintain the temperature. For demonstrations of different techniques for making them you can search Youtube for Rosettes. I will add more description to this recipe entry as I figure more out. Updated: 11/14/2014


Confectioners' Sugar Glaze Icing

Ingredients:
1 1/4 Cups Confectioners' Sugar
3 Tablespoons Milk
1/2 Teaspoon Clear Vanilla Extract

Step 1: Stir milk into sugar. Add vanilla. Drizzle on baked goods.
Step 2: May be thickened with confectioners' sugar or thinned with milk or other flavored liquids.


Meatloaf

3-5 lbs hamburger

1 lg handful dried onion - or 1 fresh onion chopped
large pinch of sage
large pinch of poultry seasoning
couple of big squeezes of ketchup
slash in some milk 1 cup or more
2 packages soda crackers from a box of crackers. (1/2 box of saltines)
2-3 eggs, more meat, more eggs.
salt and pepper

Mix well, form into loaf approx 2-3 inches thick, place in pan to fit.

Cover with a layer of ketchup.

Bake in 350 degree oven for approx 1 hr or until browned.

If you want to make gravy add a couple of glasses
of water to meatloaf pan drain and make gravy in
smaller sauce pan.

for gravy, in 1 1/2 pt of juice or drippings mix 3 T
in glass add 2 T flour mix well then add milk or
potato water enough to mix into thick liquid-mix
very well with your fork, then slowly pour into your
liquid in sauce pan.  Cook on med high stirring
constantly until thickened to desired consistency.
Remove immediatly from heat.


Spanish Rice

Brown Hamburger approx 3 lbs
Add 3 cans diced tomatoes with juice
Add 3 cups instant rice
Add a large handfull of dried onion
Add 2 cups tomatoe juice and reserve the rest for adding if the rice soaks up too much.
Simmer until done.

For those who like green peppers in their Spanish rice chop up 2 green
peppers and add as soon as you start heating the hamburger.


Spaghetti

Brown 3 lbs hamburger

Add 1 large handful onion
Add 1 tsp chopped garlic or 1/2 tsp of garlic powder
Add 1/2 tsp oregano
Add 3 cans of any favorite spaghetti sauce
3 small cans mushroom bits and pieces if desired.
Add 1 small can chopped tomatoes

For Spaghetti follow instructions on box. Use about 1/2 pkg.
Cook until tender then drain and mix with your hamburger
mixture. Don't use over 8 oz of dry pasta.

Put in roaster then sprinkle thickly on top with shredded
cheese...you can mix all kinds for this I usually use Italian
and parmasan with cheddar being the larger base. Mix this
all togetherin a bowl then sprinkle over the top of the
spaghetti.  Bake in 350 degree oven until cheese is browned.


Potato Soup

1 to 2 qts potatoes peeled and cut up in bite size portions
1 medium onion chopped up small
1 cup celery, cut up small

Put in kettle with just enough water to cover, no more.
Boil until potatoes are done 15-20 minutes.
Do not drain.

Add 1 stick margerine
then add 1-2 qts milk and
bring to almost boiling...
do not boil as that may clabber your milk..

This is always best if used the 2nd day and reheated.

Optional: bacon bits, shredded cheddar cheese.

If you like your soup thicker add 1 or 2 handfuls
of instant potatoes.


Pie Crust

2 c. white flour
1 tsp. Salt
2/3 c. lard
1 egg yolk beaten - add milk to make 1/2 cup

Cut the flour into the lard. Add Salt. Mix in
the liquid and roll out onto a floured board.

Makes 1 (2 crust) pie.

Chicken Noodle Soup

Boil your chicken. Save broth.

Cool chicken and cut off bone and into bite
sized pieces. (Unless you grab a jar or two of 
mom's canned chicken)

Put chicken back in broth, add 1 or 2 qts of
hot water. 

Add chicken flavoring about 1 Tblspn.
Add 1 onion chopped up small. 
Add celery leaves, and about 1 tsp parsley flakes.

Carrots or peas Optional

Add salt and pepper.
Add 1 bag of homemade noodles from mom
and bring all to a boil until the noodles are
done cooking.


Old Fashioned Kolaches

Recipe from Jenni Poskochil

2 pkgs dry yeast in 1/2 cup warm water, let set
Mix:
2/3 Cup shortening
2/3 cup sugar
1 cup instant cheap potato flakes
1 cup warm milk
4 egg yolks, beaten
4 cups flour, will be sticky
Let rise then punch down and form into walnut sized balls.
Let rise then punch the centers down and put in favorite fillings.
Let rise.
Bake in 350 degree oven until golden brown.
